Chicken Salad with Grapes & Walnuts

Ingredients

  • 8 chicken breasts, boneless and skinless
  • 1/2 c white wine
  • 1/2 c water
  • 1/2 c mayonnaise
  • 1 tb worcestershire sauce
  • fresh ground pepper
  • 1 c grapes, seedless & halved
  • 3 tb Scallions, chopped (optional)
  • 1/2 c walnuts, chopped (optional)

Directions

  1. Steam the chicken breasts in the white wine and water until cooked through. Remove thechicken from the pan and allow to cool. Cut into bite-sized chunks and set aside.

  2. Combine mayo, worcestershire sauce, and pepper in a large bowl. Toss chicken into bowl and coat with mayo. Just before serving, add grapes, scallions, and walnuts. Adjust seasoning with salt and pepper. Chill and serve.
