Company Potatoes

Also known as “Funeral Potatoes”

Serves 8 people

Ingredients

  • 1 pound frozen hash brown potatoes
  • 1/4 cup butter, melted
  • cup onion, chopped
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 8 ounces sour cream
  • 1/2 tsp salt
  • pepper, to taste
  • 1 1/2 cups corn flakes, crushed
  • 2 Tbs butter, melted

Directions

  1. Combine potatoes, butter, onion, soup, cheese, sour cream, salt and pepper. Pour into greased casserole dish.

  2. Top with corn flakes and 2 Tbsp butter.

  3. Bake at 350° for 45 minutes.
