Savory Cherry Compote

Serves 8 people
Ingredients
- 1 lb (4 cups) fresh sweet cherries, halved & pitted
- 1/3 cup sugar
- 1 tsp finely chopped fresh rosemary
- 2 tsp balsamic vinegar
- Coarse salt and ground pepper
Directions

In small saucepan, combine cherries, sugar, fresh rosemary, and 1 Tbsp water.

Bring to a boil over high heat.

Reuce heat to medium-low, cover, and simmer until cherries are nice and tender and liquid is slightly thickened, 12-15 minutes.

Remove from heat and stir in vinegar.

Season lightly with salt and papper.

Let stand at room temperature until cool, then serve or store.
