Savory Cherry Compote

Ingredients

  • 1 lb (4 cups) fresh sweet cherries, halved & pitted
  • 1/3 cup sugar
  • 1 tsp finely chopped fresh rosemary
  • 2 tsp balsamic vinegar
  • Coarse salt and ground pepper

Directions

  1. In small saucepan, combine cherries, sugar, fresh rosemary, and 1 Tbsp water.

  2. Bring to a boil over high heat.

  3. Reuce heat to medium-low, cover, and simmer until cherries are nice and tender and liquid is slightly thickened, 12-15 minutes.

  4. Remove from heat and stir in vinegar.

  5. Season lightly with salt and papper.

  6. Let stand at room temperature until cool, then serve or store.

  7. Makes one cup. 66 calories, 1g prot, 0g fat, 17g carbs, 1g fiber per serving.
