Mom’s Strawberry Shortcake

Ingredients

  • 1/4 C sugar + 1/3 C sugar
  • 1 3/4 C all purpose flour
  • 1/2 C shortening
  • 1/3 C milk
  • 1 egg
  • 1 tablespoon double-acting baking powder
  • 1 teaspoon grated lemon peel or 1/4 tsp real lemon
  • 3/4 teaspoon salt
  • 2 pints strawberries
  • butter or margarine, softened
  • 1 C heavy or whipping cream, whipped

Directions

  1. eheat oven to 450. Prepare shortcake: Grease 9-inch round cake pan. Into medium bowl, measure 1/4 cup sugar and next 7 ingredients. With mixer at medium speed, beat mixture until well combined and a soft dough forms. Pat the dough evenly into the prepared cake pan. Bake 15 minutes or until golden on top.

  2. Wash and hull strawberries, reserving a few for garnish. sprinkle the remainder with 1/3 C sugar; mash slightly.

  3. Invert the shortcake onto platter; with long, sharp knife, carefully split hot shortcake horizontally. Spread both cut surfaces evenly with softened butter or margarine.

  4. Onto bottom half, spoon half of strawberries; top with other cake half; spoon remaining strawberries over top.

  5. Spread the whipped cream over the mashed strawberries and then garnish with the reserved whole strawberries.
