Moroccan Couscous & Pumpkin

I sometimes use quinoa instead of couscous and is tasty and healthy!

Ingredients
- 1 lb. pumpkin chopped
- 1 C water
- 1 small onion
- 1 tsp. cinnamon
- 1/2 C maple syrup
- 1 C couscous
Directions

Steam pumpkin in water 5 min. (until tender)

add remaining ingredients.

simmer in covered pot for 2 min.

turn off heat

let covered pot sit for 3 min.
