Cheesy Chicken and Veggie Casserole

Ingredients

  • 1 package scalloped potatoes
  • 2 cups boiling water
  • 3/4 cup skim milk
  • 1 1/2 cups skinless boneless chicken breast -- cooked, diced
  • 1 cup fat-free cheddar cheese -- shredded
  • 1/2 cup frozen mixed vegetables -- thawed
  • 1 4 oz. Can mushrooms -- drained

Directions

  1. Heat oven to 400°.

  2. Mix potatoes, sauce mix and water in ungreased 2-quart round casserole. Stir in remaining ingredients.

  3. Bake uncovered 40-45 minutes of until potatoes are tender. Let stand a few mintues.

  4. MICROWAVE DIRECTIONS: Mix potatoes, sauce mix and 1 1/2 cups hot water in 2-quart microwavable casserole. Stir in remaining ingredients. Microwave uncovered on High 25 minutes or until tender. Let stand uncovered 5 minutes.
