Cheesy Chicken and Veggie Casserole

Ingredients
- 1 package scalloped potatoes
- 2 cups boiling water
- 3/4 cup skim milk
- 1 1/2 cups skinless boneless chicken breast -- cooked, diced
- 1 cup fat-free cheddar cheese -- shredded
- 1/2 cup frozen mixed vegetables -- thawed
- 1 4 oz. Can mushrooms -- drained

Heat oven to 400°.

Mix potatoes, sauce mix and water in ungreased 2-quart round casserole. Stir in remaining ingredients.

Bake uncovered 40-45 minutes of until potatoes are tender. Let stand a few mintues.

MICROWAVE DIRECTIONS: Mix potatoes, sauce mix and 1 1/2 cups hot water in 2-quart microwavable casserole. Stir in remaining ingredients. Microwave uncovered on High 25 minutes or until tender. Let stand uncovered 5 minutes.
