ASIAN SPINACH SALAD

Ingredients

  • 2 cups fresh spinach
  • 1 cup grated carrots
  • 1 cup bean sprouts
  • 1 Tbs fresh lime juice
  • 1 Tbs rice wine vinegar
  • 2 tsp low-sodium soy sauce
  • 1/2 tsp sugar
  • 1/2 tsp sesame oil
  • 4 tsp chopped dry-roasted peanuts

Directions

  1. Combine spinach, carrots, and bean sprouts in a large bowl.

  2. Combine lime juice, rice vinegar, soy sauce, sugar, and sesame oil, stirring well with a whisk.

  3. Toss with spinach mixture.

  4. Top each serving with 1 tsp chopped dry-roasted peanuts.
