Gazpacho

The first true taste of summer

Serves 8 people

Ingredients
- 2 cloves garlic
- 3 cups chopped, seeded tomatoes (6-8)
- 1 cup peeled, seeded, chopped cucumber (2-3)
- 1/3 cup minced green pepper
- 1/2 cup chopped onions
- 2 TBSP olive oil
- 2 tsp lemon juice
- 1 tsp salt
- 1/3 tsp Tabasco
- 1 cup V-8 (we usually use low-sodium)
- black pepper to taste
- minced jalapenos to taste (seeds removed)
Directions

Mix all ingredients in a large bowl.

Refrigerate for at least one hour prior to serving.

Tastes better after sitting for a day, if it lasts that long!
