SIMPLE SPROUTS STIR-FRY

Ingredients
- 3 cups mung bean sprouts
- 1 Tbs vegetable or peanut oil
- 2 thin slices ginger
- 1 Tbs soy sauce
- 1/4 tsp salt
- 1/2 tsp granulated sugar
- 1/2 tsp Asian sesame oil, optional
Directions

Rinse the sprouts and drain thoroughly.

Heat a wok or skillet over medium-high heat until it is nearly smoking, and add the oil. When the oil is hot, add the ginger. Brown for 2 to 3 minutes and then remove from the pan.

Add the mung bean sprouts. Stir-fry for a minute, stirring in the soy sauce. Stir-fry for a bit longer, stirring in the slat, sugar, and sesame oil if using. Serve hot.
