Provolone Chicken

Quantities should be determined based on the amount necessary to reasonably cover the number of chicken breasts made.

Ingredients

  • Chicken breasts, baked or grilled
  • Onions (vidalia) and mushrooms, sauteed
  • Cream of chicken soup, 98% fat free
  • Garlic powder
  • Salt and pepper
  • Reduced fat provolone cheese slices (Sargento)

Directions

  1. Grill or bake chicken breasts with a dash each of salt, pepper, and garlic powder

  2. Preheat oven to 350 F.

  3. Leave cooked chicken in glass baking dish.

  4. Sautee mushrooms and onions, preferably in a butter substitute, until sufficiently cooked down.

  5. Pour cream of chicken soup over chicken – need not cover all breasts, but should fill in all spaces between them and cover a portion of each.

  6. Lawyer mushrooms and onions evenly over the top

  7. Place a proportional slice of provolone over each chicken breast.

  8. Heat in oven for approximately 5-10 minutes (depending on your oven).

  9. Remove and serve.
