Spoon Bread (corn)

Ingredients

  • 3 eggs
  • 1/3 cup milk
  • 2 TBL cornmeal
  • 2 TBL flour
  • 2 TBL sour cream
  • 3 ears of fresh corn kernels (I use frozen)
  • dash of cayenne
  • 1 jalapeno pepper
  • 1/2 cup grate jack or cheddar cheese

Directions

  1. Preheat oven to 350 F.

  2. Separate 3 eggs into 2 bowls.

  3. Whisk the yolks with 1/3 cup milk.

  4. Whisk in cornmeal, flour, and sour cream.

  5. Stir in corn and dash of cayenne.

  6. Beat the eggs whites on high until soft peaks form. Gently fold into the yolk mixture.

  7. Mix jalapeno and cheese. Sprinkle it inside a buttered 1-quart baking dish.

  8. Spoon the egg mixture in o the dish and top with another 1/4 cup of cheese.

  9. Bake for 25-30 minutes. Let stand 3 minutes and serve with broiled tomatoes.
