Ingredients
- 2 TBL olive oil
- 2 leeks
- 2-3 cups lima beans (cooked - I used white)
- 1 carrot, diced
- 3 cups broth
- half inch of ginger grated
- 1/4 tsp cumin
- 1/4 tsp nutmeg
- dash of cinnamon
- salt and pepper to taste
- lime and sour cream for serving
Directions

Sautee leeks for about 6 minutes.

Add the carrots and spices and sautee for fee more minutes.

Add lima beans and broth and cook for 20-30 minutes.

Blend, squeeze in lime juice to taste and serve with dollop of sour cream.
