Mediterranean Baked Cod Fillets

Ingredients

  • 2 lbs cod or haddock fillet
  • 2 Tbsp butter, melted
  • 1 cup whole wheat bread crumbs
  • 1/4 cup chopped walnuts
  • 1 Tbsp fresh rosemary, finely chopped
  • 2 lemons, zest and juice
  • 2 Tbsp fresh parsley, finely chopped
  • 1 clove garlic, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup extra virgin olive oil
  • 1 small red chile pepper, finely chopped

Directions

  1. Preheat oven to 400 degrees.

  2. Add mellted butter to bread crumbs.

  3. Mix in half of the following and reserve the other half: lemon zext and juice, walnuts rosemary and parsley, salt, black pepper and chile pepper.

  4. Place fish fillets in greased baking dish.

  5. Cover fish with bread crumb mixture

  6. Bake 25 minutes.

  7. Mix reserved ingredients and chopped garlic with olive oil and drizzle over baked fish.
