Squash Cheddar Muffins

Ingredients

  • 1 cup whole wheat flour
  • 1 cup cornmeal (had self-rising for this recipe)
  • 1/2 cup rolled oats
  • 1 cup yogurt or buttermilk
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 tsp baking powder (2 tsp if not using self-rising cornmeal)
  • 1/2 tsp baking soda (1 tsp if not using self-rising cornmeal)
  • 1/4 tsp salt
  • spices to taste: nutmeg, ginger, allspice
  • dash cayenne pepper
  • 1/2 cup chives and scallions
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat oven to 360 deg farenheit.

  2. Mix all dry ingredients. Mix all wet ingredients. Mix together. May need to add a bit of water if mixture is too dry. Pour into muffin tins and bake 22-25 mins.
