Tomato Fritters w/ Mixed Greens

Ingredients
- 5 tomatoes, cubed
- 1/2 teaspoon sugar
- 1 teaspoon rice wine vinegar
- 1 clove garlic, minced
- 1/2 cup whole wheat flour
- 1/2 cup crushed cornflakes
- 1 tablespoon crumbled crisp bacon
- ⅓ cup oil
- Kosher salt and freshly ground black pepper to taste
- 5 cups mixed greens
Directions

Combine all ingredients except salad greens and mix well. Scoop heaping tablespoons of mixture into the palm of your hand to shape into rounds about ½-inch thick. Place rounds into preheated nonstick skillet over medium heat. Cook until golden brown on both sides, turning only once. Serve on top of mixed greens.
