Ingredients

  • Green Bean Salad
  • Miso Dressing, recipe follows
  • 1/4 red onion, julienned
  • 1 pound fresh green beans, washed, trimmed and blanched in salted water
  • Miso Dressing
  • 1 teaspoon ground cumin
  • 2 tablespoons blonde miso paste
  • 1 tablespoon honey
  • 2 tablespoons white wine vinegar
  • Zest and juice of 1 lemon
  • 1/4 cup vegetable oil

Directions

  1. To make Green Bean Salad:

  2. Prepare the miso dressing and set aside. Soak the red onion in cold water for 5 minutes, drain and pat dry. Place the green beans and red onions in a bowl. Add the miso dressing and toss.

  3. To make Miso Dressing:

  4. In a bowl, mix the cumin, blonde miso paste, and honey. Add the vinegar, lemon zest, and lemon juice. Add the oil, and whisk to incorporate.
