Eleanor’s shrimp

Ingredients

  • 1/2 Tbs olive oil
  • 3-4 cloves of garlic, chopped
  • 2 small shallots, chopped
  • 1 cup white wine
  • 1 pound (21-25) shrimp
  • baby spinach

Directions

  1. Saute the shallots and garlic over medium heat for about 2 minutes. Add the white wine and cook for 5 minutes.

  2. Add the shrimp and cook for 2 minutes.

  3. Serve over a bed of spinach.
