Spinach Rice Torta

Ingredients

  • olive oil
  • 1/4 cup find dry bread crumbs
  • 1 10 oz package chopped frozen spinach
  • 3 cups cooked rice
  • 3 eggs, beaten
  • 1 cup ricotta or cottage cheese
  • 1 cup parmesan cheese
  • dash pepper

Directions

  1. eheat oven to 350.

  2. Grease bottom and sides of 8×8×2 inch pan or 2 quart baking dish. Cover with bread crumbs.

  3. Squeeze water from spinach.

  4. Mix spinach, rice, 3 eggs, ricotta, parmesan and pepper. Mix well.

  5. Turn into dish.

  6. Bake 350 for 45 minutes or until firm.
