Ingredients
- 1 19 oz/540 ml can black beans, rinsed
- 2 tsp ground cumin
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp chipotle pureed or 1 jalepeno, finely chopped
- 2 tbsp yogurt cheese or mayo
- 1 cup cooked corn
- 1/4 cup fresh cilantro
- salt
- pepper
Directions

In food processor, puree beans, cumin, olive oil, lemon juice, pepper and yogurt cheese until smooth.

Add corn and either stir or puree it in.

Add 1/2 cilantro.

Season with salt and pepper.
