Ingredients
- 4 boneless, skinless, chicken breasts (I threw them in the crock pot frozen!)
- 3/4 cup medium or hot salsa
- 1/4 cup creamy peanut butter
- 2 Tbs. lime juice
- 1 Tbs. soy sauce
- 1 tsp. grated fresh gingerroot (or 1 tsp. ground ginger)
- **I also added some chopped jalepenos for heat and chopped red peppers to get more veggie servings
- cilantro(for garnish)
- chopped peanuts(for garnish)
Directions

Place chicken breasts in a slow cooker. In a small bowl, mix salsa, peanut butter, lime juice, soy sauce, and ginger and pour mixture over chicken. Cover and cook on low for 8 hours. Shred chicken with forks while in crockpot and serve over brown rice or quinoa! Top with cilantro and peanuts.
