Ingredients
- 1/2 cup mayonnaise
- 1/2 cup applesauce
- 3 tablespoons honey
- 1 tablespoon lemon juice
- Salad:
- 3 or 4 crisp, firm apples
- 2 or 3 ribs celery
- 1 1/2 cups walnuts, in large pieces
- Salt to taste
- lettuce leaves (Marion suggest Butterhead or Iceberg. I also use Romaine)
Directions
-
To make the dressing, mix together the mayonnaise, applesauce, honey and lemon juice in a small bowl. (If the honey is cold, it will help to warm it slightly before adding to the mixture)
-
To make the salad, core the unpeeled apples and ut them into bite-sized chunks. Chop the celery into 1/2-inch chunks. Put the apples, celery, and walnuts in a large bowl and sprinkle lightly with salt. Pour the dressing over, mix well, and serve on a bed of lettuce leaves.
