- 1/3 Cup Diced Onion
- 1 TBSP Lemon Juice
- Kosher, Himalayan, Aromatic or Sea Salt
- Black Pepper

Quarter & steam potatoes until fork tender, about 10 minutes. Leave on skin, cut

into chunks & cool potatoes in refrigerator. In a large bowl mash avocado, stir
