Grilled Quail with Blackberry-Shallot Glaze

Ingredients
- 1 cup Zinfandel or fruity wine
- 1/4 cup finely chopped shallots
- 1/2 tsp cracked black pepper
- 1/3 cup blackberry jam
- 2 tsp butter
- 4 4-oz servings quail
- 1/2 tsp salt 1/4 tsp black pepper
Directions

Place first 4 ingredients in saucepan over med heat.

Boil and reduce, about 8 min

Strain over bowl eliminating solids. Keep wine mixture.

Add wine mixture and jam to pan over med heat for 2 min.

Remove and stir in butter.

Grill quail with salt and pepper until done. Add 2 tbs glaze to quail and serve.
