- 4 (6-oz) skinless, boneless chicken breast halves
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 tbs all-purpose flour
- 2 tbs Dijon mustard
- 1 large egg, lightly beaten
- 1/2 cup breadcrumbs
- 1 1/2 tablespoons grated fresh Parmesan cheese
- 2 tsp finely chopped fresh parsley
- 2 tsp chopped fresh chives
- 1 garlic clove minced
- 1 tbs olive oil
- 4 lemon wedges

Pound chicken into 1/2 inch thick slices. Sprinkle with salt and pepper.
