Pad Thai

I try to use whole wheat pasta when I can but the wide rice noodles work great with this recipe!

Ingredients
- 1/3 cup chili sauce
- 1/8 cup brown sugar
- 1 tbs water
- 1 tbs fish sauce
- 3/4 tbs fresh ginger
- 1/2 tsp chopped serrano chilies
- 4 oz noodles
- 2 tsp vegetable oil (canola)
- 1 egg lightly beaten
- 1 1/2 minced garlic cloves
- 1/2 cup bean sprouts
- 6 oz cooked chicken
- 1/2 tbs peanut butter

Boil noodles in med saucepan until done.

Combine first 5 ingredients (sauce-ginger) in a small bowl. Heat oil in a large skillet over med heat. Add garlic and peppers, saute for 30 second. Then add egg and scramble for 30 seconds. Place cooked noodles in pan, mixing with egg mixture. Then add bowl of sauce, cooked chicken and peanut butter. Cook until heated and sauce thickens. Remove from heat, add sprouts and serve.
