Cowboy Beans

Ingredients
- 1 tablespoon olive oil
- One large onion, diced
- 2 garlic cloves, sliced
- One, 15 ounce can black beans, drained
- One, 15 ounce can pinto beans, drained
- One, 15 ounce can white beans, drained
- One, 16 ounce jar of your favorite salsa (I use Frontera or Zapata Fire Roasted or a container of the 'fresh' stuff from the produce section)

Sauté the onion and garlic in olive oil in a nonstick skillet over medium high heat for 10 to 12 minutes, until softened. Add the beans and salsa bring to a boil, lower heat and simmer 10 minutes. Makes 8, one-half cup servings
