Corn, Avocado & Black Bean Tostados

Ingredients

  • 8--6 inch corn tortillas
  • salt
  • 1 15 oz can drained and rinsed black beans
  • 1 15 oz can corn
  • 1 small ripe avocado
  • 2 tbsp cilantro
  • 2 tbsp olive oil
  • 2 tsp lime juice
  • 1/2 cup cheese

Directions

  1. Bake tortillas 5-7 minutes until beginning to crisp.

  2. Combine all other ingredients.

  3. Top tortillas with mixture.

  4. Sprinkle with cheese.

  5. Broil tostadas until cheese melts.

  6. Serve immediately
