Spinach and Cottage Cheese

Ingredients

  • 8 cups of spinach
  • 4 large egg yolks
  • 2 Tbs chopped parsley
  • 2 Tbs chopped dill
  • 2 cups of cottage cheese
  • salt, pepper, nutmeg

Directions

  1. Preheat oven to 350°.

  2. Wash and trim stems from 8 cups spinach and add to a large pot of boiling water.

  3. Cook until tender, about 5 minutes.

  4. Drain, rinse, and squeeze out moisture.

  5. Coarsely chop.

  6. Whisk 4 large egg yolks in a bowl until smooth.

  7. Add 2 tbsp chopped fresh dill and 2 tbsp chopped fresh parsley.

  8. Stir in spinach and 2 cups cottage cheese.

  9. Season with salt, pepper and grated nutmeg.

  10. Pour into buttered baking dish and bake for 45 minutes, until set.

  11. Let cool and cut into squares.
