Strawberry Cake

I actually baked this for 70 minutes at 325.

Ingredients

  • 6 Tbs sweet butter, at room temperature
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 lb strawberries, cut in 1/2
  • 2 T sugar

Directions

  1. Preheat oven to 350 degrees. Butter a 10" cake pan or pie pan.

  2. Whisk together the flour, baking powder, an salt. Set aside.

  3. Beat the butter and 1 cup of sugar until light and fluffy, add the egg, milk and vanilla and beat for 3 minutes. Reduce the speed of the mixer and add the dry ingredients.

  4. Pour batter into the battered pan.

  5. Arrange strawberries cut side down in on the batter, close together. Sprinkle with the remaining 2 T sugar.

  6. for 10 minutes, reduce the heat to 325. Bake for almost an hour until cake is golden brown and firm to the touch.

  7. Cool, cut into wedges, serve with whipped cream.
