Ingredients
- 1.5 cups whole white wheat flour
- 1/2 cup all-purpose flour (or barley flour)
- 1 cup rolled oats
- 1.5 tsp baking powder
- 1 tsp baking soda
- .5 tsp salt
- 1.5 tsp cinnamon
- .5 tsp cloves
- .5 tsp ginger
- 2 eggs
- .5 cup beet (golden) puree or applesauce
- .25 cup veg oil or coconut oil
- 2 tsp vanilla
- 2 ripe mashed bananas
- 2 cups shredded zucchini
- .5 cup cranberries (or other dried fruit)
- .5 cup chopped almonds (walnuts)
- *OR add chocolate chips instead of fruits

Mix dry ingredients.

Mix wet ingredients. combine and mix until batter is consistent. add dry fruits and nuts and mix thoroughly.

Bake at 350deg for 40-45 mins. 2 loaf pans or one 8×8 pan.
