Broccoli casserole from Betty’s Kitchen

Ingredients
- 16 oz chopped broccoli
- 2 Lg eggs, well beaten
- 2 tsp finely chopped onions
- 1 cup mayo, reduced fat
- 1 cup sharp cheddar cheese, fine shred
- 1 can cream of celery
- gr black pepper
- 1 sleeve of Ritz crackers, crushed
Directions

*Cook the broccoli according to package directions, drain.

- Mix next 6 ingredients in a bowl (eggs through bl pepper) and mix well.

**Spray an 8×11″ baking dish with canola oil, and spread the broccoli casserole in it. Spread the crushed cracker crumbs over it evenly.

Bake at 350 degrees for about 30 minutes.
