Spinach Rice Salad

I’ve been making this salad for nearly 35 years! Great salad for barbecues and summer picnics. I sometimes use brown rice but I think it works better with regular rice.

Ingredients
- 1 cup rice
- 1/2 cup bottled Italian dressing (Viva Italian 7 Seas)
- 1 Tbs soy sauce
- 1/2 tsp sugar
- 2 cups fresh spinach, cut into chiffonade
- 1/2 cup sliced celery
- 1/2 cup sliced green onions, including tops
- 1/3 cup crumbled crisp bacon
Directions

Cook rice according to package directions; transfer to bowl. Cool slightly. Combine dressing, soy sauce and sugar, and add to rice. Cover and chill. Fold in remaining ingredients before serving.
