Zucchini Casserole

I’ve been making this for a long time! Art found this recipe in the newspaper and brought it home for us to try. He was still working in NY then.

Ingredients
- 2 lbs. of zucchini, sliced thin (5-6 zucchinis)
- 1 large onion
- 4 Tbs oil
- 16 oz can of stewed tomatoes
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dry basil
- 1/2 tsp oregano
- 1/2 cup grated cheddar cheese
- 16 oz pkg of sliced muenster cheese
Directions

Saute zucchini and onion in oil until onion is soft.

Use 2 qt casserole. Mix rest of ingredients. and place slices of muenster cheese over mixture.

Bake uncovered at 350 degrees for 30 minutes.
