Green Curry

Ingredients

  • 2-3 chicken breats
  • 3 Tb green curry paste
  • 2 cans coconut milk
  • 2 cans sweet peas, drained
  • 1 can bamboo shoots
  • Fish sauce
  • Red or green chili peppers, if desired

Directions

  1. Little oil in the bottom of the bottom on the pan with chicken and curry paste. Let these things cook for 4 or 5 minutes (don’t worry, the chicken continues to cook afterwards, so it doesn’t need to be done)

  2. Then add coconut milk, sweet peas (drained of water), bamboo shoots (also drained of water) squirt in some fish sauce throw in a couple of red or green chili peppers if you want to (but if you’re concerned with spiciness, don’t put them in….whatever you do, don’t accidently eat them with the curry.

  3. I think that’s it….it probably needs to simmer about 20 minutes and then it’s ready to go. Try not to let it boil, though that won’t hurt it too badly.
