JoAnn’s Cream of Asparagus Soup

Serves 4 people

Ingredients

  • 1 lb asparagus, cut in 2" pieces
  • 1 onion, chopped
  • 2 Tbs butter & flour
  • 4 cups chicken broth
  • 1/2 cup cream (lt?)
  • salt & pepper

Directions

  1. Saute onion in butter for 3 minutes. Stir in flour. Add broth slowly. Add asparagus, cover, cook (simmer) 20 minutes or until done. Puree until smooth. Add cream, s & p, reheat.
