The Mamma’s Magnificent Mad Muffin Recipe

Ingredients

  • 2 cups boiling water
  • 2 cups 100% bran coarse
  • 1 cups Olive Oil
  • 2 1/2 cups White Sugar
  • 3 tablespoons brown sugar
  • 3 tablespoons baking soda
  • 1 tablespoons salt
  • 5 cups all purpose flour
  • 2 cups raisins
  • 4 eggs beaten
  • 4 cups bran flakes
  • 1 liters of Buttermilk

Directions

  1. In small bowl, mix these puppies:

  2. Mix 2Cups water and 2 cups bran and let sit until coolish

  3. In medium bowl, mix these puppies:

  4. x 1Cup Olive Oil, 2.5 Cups White Sugar,3 Tbls brown sugar, 3 Tbls baking soda and 1 Tbls salt

  5. In large bowl, mix these puppies:

  6. Mix 5 Cups flour, 2 Cups raisins, 4 eggs, 4 Cups bran flakes, 1 Lt buttermilk

  7. MARRY 1, 2, and 3 together once # 1 has cooled adequately.

  8. The buttermilk makes it taste REALLY rich without mega calories esp. if you use lo-fat (It’s also nice to add flax seed – pulverized- not whole seeds to get the goodies out.) Also blueberries are awesome………add just before baking.

  9. Store batter in refrigerator at least one night and bake when you want to.

  10. Batter will keep for 6 weeks in refrigerator…..as if it will last that long!

  11. BAKE @ 200 degrees for 15-20 (I’ve been using 25 for the big ones) minutes.

  12. It’s possible to buy organic olive oil in a spray can…………great for interior of muffin tins.
