Spinach-Beef Casserole

Ingredients

  • 1-1/2 lb ground beef
  • 1 cup fresh mushrooms, sliced
  • 2 Tbs garlic, minced
  • 1-1/2 tsp oregano
  • 2 pkg. (10 oz. each) frozen chopped spinach, thawed and squeezed
  • 1 cup cream of celery condensed soup
  • 1 pint sour cream
  • 1/2 cup shredded mozzarella cheese
  • salt
  • black pepper

Directions

  1. Brown beef in skillet until done. Add garlic, mushrooms and oregano, stir fry 5-7 minutes.

  2. Add spinach (drained and squeezed to remove as much juice as possible). Stir in to separate spinach.

  3. Add condensed soup, sour cream, salt and pepper. Spoon mixture into a buttered casserole dish (I think a 9 × 11). Scatter cheese evenly over top.

  4. Bake uncovered at 350 for 30 minutes or until bubbly at center. Let stand and cool for 10 minutes before serving.
