Picadillo

Ingredients

  • 1 lb ground meat (or whole of part bag of veggie crumbles) Drain grease if using meat
  • 1/2 green pepper (or whatever color you have)
  • 1 small onion or equivalent
  • 3 cloves of garlic
  • 1 can stewed tomatoes (sometimes I also add a can of tomato sauce)
  • 1 tsp oregano
  • Pinch of sugar
  • 1/2 tsp salt
  • Ground pepper

Directions

  1. Brown meat or veggie crumbles. Process green pepper, onion and garlic in blender or food processor til smoothish mush and add to meat mixture. Add remaining ingredients, bring to boil, turn down heat and simmer 15 mins or more til not soupy. Serve on rice, black beans. Top with sliced olives (or not) and capers.
