Ingredients
- Several stalks of parsley, chopped
- 3 gloves garlic
- 2-3 Tbs olive oil
- 3-5 mushrooms
- 1 can minced clams, with juice
- 1 c. (or so) frozen spinach, thawed a bit in microwave
- 2/3 c of milk
- 1-2 Tbs corn starch
- 1 tsp basil
- 1/2 tsp oreganol (optional)
- Monterey jack cheese
- Parmesan Cheese
Directions

In food processor, (or just chop fine) chop parsley and garlic. Heat oil in skillet, medium heat. Add parsley and garlic and toss around. Chop mushrooms (in processor if using) and add to parsley. Toss and add spinach. Stir corn starch into milk until dissolved and add. Add herbs. Serve on pasta, top with Monterey jack and parmesan cheese.
