Ingredients
- 3 or 4 yellow squash
- 2-3 Tbs chopped onion
- 1 egg, beaten
- 4 crushed saltine crackers (or other breading like bread crumbs or crumbed up pice of bread)
- 1/3 c cheese, cheddar or blend
- (Can also add a Tbs or so of sour cream)
- Salt and pepper
- 1 Tbs butter
- Bread crumbs for topping, buttered or sprayed with butter.
Directions

Cook squash in steamer or a inch or 2 of water til tender crisp. Cut in half lengthwise and scoop out pulp when cool enough to handle. Add everything except extra bread crumbs for topping and mix. Scoop back into shells. Top with buttered crumbs and bake at 350 or so about 15 -18 minutes or until top is browned.
