Tomato Basil Soup

Ingredients

  • 2 (28-35 ounce) can pureed tomatoes (tuttorosso or dei fratelli)
  • 1 (5.5 ounce) can V8
  • 1 (14.5 ounce) can chicken broth
  • 20 fresh basil leaves, cut into thin strips
  • 1/2 T brown sugar (3/4 teaspoon for half recipe)
  • 1/2 cup heavy cream

Directions

  1. In a large saucepan, combine the tomatoes, vegetable juice, and chicken broth. Bring to a boil, and cook for 30 minutes. Remove from heat, and stir in the basil, cream, and brown sugar. Cook a few minutes more to heat through. Serve immediately.
