Parmesan Roasted Cauliflower

Ingredients

  • 1 Large head cauliflower
  • 3 Tablespoons olive oil
  • kosher salt & freshly ground black pepper
  • 1 cup freshly grated parmesan cheese (2 ounces)
  • 1 cup freshly grated Gruyere cheese (2 ounces)

Directions

  1. eheat oven to 350.

  2. Cut cauliflower into florets, discarding stems.

  3. Place the florets on a sheet pan.

  4. Drizzle with olive oil and sprinkle with salt and pepper. Toss well.

  5. Bake 30 minutes, tossing once, until tender and starting to brown. Sprinkle with parmesan and gruyere and bake for 1-2 minutes more, until cheese melts.
