Macadamia Nut-Crusted Chicken Breasts with Wilted Spinach-Pineapple Salad

Ingredients

  • See Almond-Crusted Chicken Cutlets with Wilted Spinach-Orange Salad recipe.
  • Omit mustard
  • 2 cups fresh pineapple
  • 2 medium limes

Directions

  1. Omit mustard. Substitute lime zest and lime wedges for the orange zest and orange wedges. Sub macadamia nuts for the almonds. Sub 2 cups fresh pineapple cut into 3/4 inch dice for the orange slices in step 3, sauteeing the pineapple for 2 minutes.
