Ingredients
- 6 cups frozen shredded hash brown potatoes
- 1 cup grated montery jack cheese with jalepenos
- 1 cup diced fully cooked ham
- 1/4 cup sliced green onion
- 4 beaten large eggs
- 1 12 oz. can evaporated milk (skim if preffered)
- 1/8 tsp. pepper
- 1/4 salt

Grease a 13×9 inch baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinke with cheese, ham, and green onion.

In a medium mixing bowl combine eggs, evaporated milk, pepper, and salt. Pour egg mixture over potato mixture in the dish. Freeze.

epare to serve, thaw and preheat oven to 350. Bake uncovered for 40 to 45 minutes or until center appears set. Let stand 5 minutes before serving.
