Quick Hollandaise

If doubling recipe, can use a regular blender or food processor if desired.

Ingredients
- 1/4 cup butter
- 2 egg yolks
- 1/8 teaspoon Dijon mustard
- 1/2 Tablespoon lemon juice
- 1/4 teaspoon salt
- small pinch of cayenne pepper or a small dash of Tobasco sauce, if desired.
Directions

Blend all ingredients except butter in a bowl with hand blender.

Melt butter in microwave in a small measuring cup. Add hot butter gradually and blend until thickened and smooth.
