Ingredients
- Rice (refer notes) – 1 cup
- Onion – 1 medium, chopped
- Tomato – 1 medium -big, chopped
- Scrambled egg – 1 (optional)
- Turmeric powder – 1/4 tsp
- Chilli powder – 1 – 1 1/2 tsp
- Mint & coriander leaves – 1 tbsp each, chopped
- Salt
- Oil ( I use sunflower)
Directions

Cook the rice in the normal method.

Make sure that the rice is not over cooked.

Heat oil in a pan & add chopped onion.

Cook it till it becomes soft & starts changing colour.

Add chopped tomato. Cook it till it becomes soft.

Add turmeric & chilli powder. Cook for 1-2 mins, till the raw smell goes.

Add salt & chopped mint & coriander leaves. Mix well.

Add scrambled egg (if you are adding) & stir. Add cooked rice. Give a good mix.

Cover & cook for 2-3 minutes. Remove from fire. Serve hot with any curry, raita, pickle & pappad.

Notes: I normally use Sona Masuri rice. You can use any white rice that you use on a daily basis. However it tastes better with Basmati rice. You can also add garam masala to spice it up.
