Ingredients
- For The Salad
- 10-12 (200-250g) pomodorino (or cherry) tomatoes, halved
- 1/2-1 small red onion, sliced
- 1/2 Cos lettuce, chopped
- small handful kale, chopped
- 15-20g chopped parsley
- 15-20g chopped coriander
- 1/2 lemon, juice of
- Pinch Himilayan Crystal (or Sea) salt
- For The Guacamole
- 2 avocadoes
- 1/4-⅓ cup red onion
- 1 tomato
- Pinch Himalayan Crystal (or Sea) salt
Directions

Prepare salad ingredients and place, then mix, in a large mixing/salad bowl.

Add guacamole ingredients to food processor and whizz up until smooth.

Add guacamole to top of salad.
