Pistachio Pesto

Ingredients

  • 2 cloves garlic
  • 1 teaspoon salt
  • 2 C pistachios
  • 4 C basil leaves, lightly packed, about 2 bunches
  • juice of 3 limes (about 6 T)
  • 1/2 C olive oil

Directions

  1. process garlic, salt, and pistachios into powder. Set aside.

  2. Pulse basil with lime juice.

  3. Add pistachio meal back into processor with olive oil. Process until mixed well.

  4. Keeps for 3 days in fridge.
