Garden Pate

Ingredients

  • 1 C almonds, dry
  • 1 T fresh ginger
  • 2 cloves garlic
  • 1 teaspoon salt
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 1/4 C yellow onion, chopped
  • 2 T olive oil
  • juice from 1/2 lemon (~1 T)
  • 1/2 C raisins (or dates)

Directions

  1. Process almonds into a powder. Empty into large bowl and set aside.

  2. Next, process ginger, garlic, and salt.

  3. Add carrots, celery and onion and pulse into small pieces.

  4. Add oil, lemon juice, raisins, and almond powder. Mix well.

  5. Scoop 1/2 C on a bed of greens, or place into a lettuce leaf to make a wrap.

  6. Optional: Form 1/2 cup patties and dehydrate 3-4 hours at 104o.
