Ingredients
- BARS
- 1 C almonds, chopped
- 1.5 C dates
- 1 vanilla bean
- 1 teaspoon salt
- zest of 1 lemon
- juice of 1 lemon (about 2 T)
- 1 C shredded coconut
- SAUCE
- 1/2 C dates
- 1 C water, plus more as needed
- 1/2 C carob powder
- 1/4 C olive oil
Directions

To make bars, chop almonds into small pieces in food processor. Use some of this nut powder to “flour” the bottom of a 9-in square baking pan.

Mix remaining ingredients, including the remaining copped almonds. Press into baking pan.

To make sauce, blend dates with water and carob in blender until smooth. Add olive oil and more water as needed to make a thick syrup.

Pour sauce on top of bars.

Keeps for 6 days in fridge.
